FDP Cookbook : Side Dishes : Cornbread Dressing

Ingredients

1 pan of cornbread (see Quaker's Pkg for recipe)
1 bag of seasoned croutons
turkey or chicken broth
1 stalk celery chopped very finely
1 medium onion, minced
1 or 2 sticks real butter or margarine
2 eggs beaten
turkey giblets simmered, cooled & minced, neck meat included
fresh ground pepper
sage


Directions

prepare cornbread per package instructions, let cool and crumble. In a large bowl take 2 cups of warm chicken/turkey stock and moisten the croutons, breaking down the cubes. Add the cornbread (try to use more cornbread than croutons), celery, onion, butter, eggs, chopped giblets, pepper and some sage. Adjust seasonings to taste. You may have to add more broth if needed to acheive a moist yet firm consistency.. I usually don't salt it because butter/margarine has plenty of salt.

Stuff turkey or bake in a covered dish until browned.
