FDP Cookbook : Side Dishes : Buttermilk Biscuits

2 cups flour
2 &1/4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon sugar
1/3 cup firm butter or margarine
3/4 cup buttermilk


In a large bowl stir together all dry ingredients. Cut butter into chunks, add to bowl and rub with fingers or use pastry blender to get chunks about pea-sized. Pour in buttermilk and stir with a fork until dough sticks together and clings to fork in a large lump. Turn dough out onto a flour dusted board and knead, making about 10 turns. (don' t overknead, they need to be flaky)

Place dough into a greased 9-inch round or square baking pan, cut biscuits with a cutter or plain drinking glass. Keep floured to prevent sticking. Bake in a pre-heated 400F oven for 15-20 minutes or until golden brown.

Want to kick this recipe up a notch? add a teaspoon of yeast to the dry ingredients, then prepare as usual but let rise about 45 minutes before you bake. Yum.
