What brand or material is best for not stripping the hex over time?

Fender stock parts are steel and they're good quality.

The hex won't strip if you first clean them out with a wire (a short section from an old G string is perfect) and use the correct wrench (.050") when adjusting them. They strip out when players and..."techs" use the incorrect tool, and also when they fill with mung from playing. It compacts in there and prevents the hex wrench from going all the way in.

Stock should be fine. If they are already stripped, some original Fender parts would be fine. There are 65 year old Strats with adjust screws that are just fine. Also, prevent excessive force being applied by the wrench. If raising the action and the guitar is tuned to pitch, it will require more force if the desired change is significant. Loosen the strings a whole step first.

If the screws seem stuck, try them the opposite direction.

You can also remove the saddles and soak 'em in mineral spirits, WD40, Liquid Wrench. Hoppe's #9, or Ballistol for an hour or so to help get 'em moving.
