I've been eating fried fish for over sixty years and last week had the best that I've ever eaten, Tabasco-marinated Grouper Cheeks, lightly fried. Amazingly good! And it seems that they used to throw this part away!

Yup! I worked in a seafood market in Murrells inlet SC in the 90s. We all kept and ate all the cheeks, nobody would buy them. Local fresh fish too!

Oh those were the days!

Never heard of them but grouper is about all I buy locally these days. Got a special creole mix, iron skillet and blacken them on the grill. Mmm.

In the winter months I stop in at the local fish market every few weeks. I buy a couple of fillets or salmon steaks and then ask him if they have any cod frames (carcasses with the head attached). He almost always does and just gives me a couple no charge.

The filleted frames, with the cheeks removed, have enough meat left on to make a big pot of chowder -- just simmer them in milk for 20-30 minutes and pick off the meat. I bake the cheeks with a cracker stuffing.

The guy buys all his fish right off the boats at the marina around the corner.
