What Cheese?

And What toppings?

I just started making my own for lunch and they are delicious!
Having some cold cuts for the SuperBowl. So many choices with all the combinations. Different breads. They are awesome.

My fridge usually has some teewurst, liverwurst, goose pate, or hard salami in it. Brie, camembert or blue cheese are my favs in the cheese department.

I met my wife in Germany while stationed there. Delicatesen-style cold-cuts and great cheeses are inexpensive and are just everyday food over there. It seemed like there was a "Metzgerei" (butcher shop) on every block. Germans often eat these foods for breakfast along with eggs.

They also go great with beer! Enjoy!

There are almost none I don't like. While I prefer the Italian cured ham products (prosciutto, gabagool, mortadella, dry salami, etc), I'm good with roast beef, pastrami, chicken, ham, etc. I like provolone, swiss, and soft ripened cheeses like Brie and Camembert. Also a big fan of Gorgonzola but save that for the Italian cured meats along with roasted red peppers. Oh, and if we include the French, I love me some pate de fois gras.

Like Chris, I prefer the Italian meats (see thread from about a week ago).

Honestly, I'm pretty much lunch-meated out.
A lot of times at work the "meeting people" order lunch from Panera or a local deli, and we (the underlings) get to vulture the remains.
Don't get me wrong - I like free food as much as the next guy. But I'm getting tired of lunch meat & subs.

Sandwich-Ham, Pastrami or Corned Beef on rye, Swiss cheese.

No bread-Hard Salami or Pepperoni with Sharp Cheddar or Irish (Shannon or Dubliner) cheese.

Technically, mortadella and salami are sausages, not ham.

Take those 4, provolone, fresh mozzarella, roasted peppers and oil and vinegar, throw it on some nice Italian bread, and yum.

Other than a bit of fish once in a while, I don't eat meat any more. But in my day I sure did like spicy pepperonis and salamis. The hotter the better.

For cheese? Gotta lead off with big ol' piece of limburger. I love blue cheeses, but I don't know how well they work with spicy sausages. So, maybe a sharp, sharp cheddar. A brie or a camembert is good for a bit of variety. Since I'lll be washing this down with a nice dry red, I guess I'll add in a blue after all.

And crusty white bread. Lots of it.

Costco has a great deal where you get two packages for less than $10. Each package has prosciutto, capocollo, dry salami with black pepper and without. I like it with gruyere and grey poupon on rye.

There is a universal name for cold cuts which has not left me since I first heard it around 50 years ago. I do not eat cold cuts, or at least what I consider to be American style cold cuts.

I do not consider Italian Prosciutto, sliced roast beef, sliced chicken or turkey, ham, dry salami, etc to be "cold cuts"..

On our many trips back and forth from Lubbock to our new home in Denison, we stop at a store in the very small town of Benjamin, Tx. They have a little store that will make you a great homemade sandwich. Even though it is a cold cut, I like the fried bologna sammich. I like cold cuts.

If they slice it at the deli counter, it’s cold cuts. All of the above, including the cheeses, are included.

My experience with "cold cuts" predated any visit to a "deli".

There was a "Lunch Meat", cold cut we would buy back in Cleveland called Spiced Ham. It was a round chub then sliced to order and the stuff was fantastic. Many stores sold it from many different suppliers.

Then it was gone. It just fell out of favor I guess and disappeared. It was my all time favorite.

I got turned on to Taylor Pork Roll by some east coasters a few years back. Fry that stuff and serve it on a toasted English muffin. Good stuff.

If anybody has a source for spiced ham I'd like to know about it. I'd have a whole chub shipped to me and buy a slicer to manage it locally.
