I cooked one yesterday, it came out PERFECT medium rare. Today, exact same time/temp, well done. Still really good, but I sure don't have the process down. ;)

I guess that's why top chefs get the big bucks.

A good filet is a good filet.

No question.

There's a place down the road about a mile that serves up a filet mignon sandwich: it's about 4oz, an inch thick and grilled, on a toasted buttery croissant with lettuce, tomato, and horseradish mayo. Holy COW, Batman!

It's amazing.

There’s a local bar/grill that does a nice size filet (probably 5 oz) also about an inch thick, served on garlic bread. Nothing else on it and nothing else needed.

I scored eight 16oz USDA Prime NY Strip steaks @ Costco for $9.99/lb Christmas Eve. Those steaks were flying out of that cooler! Haven't cooked one up yet with all the Christmas turkey and ham around. Gave 3 to my 89 year old mother. That should last her awhile! :o) I may put one on the grill tonight or tomorrow.

We had an excellent beef tenderloin that I bought at Whole Foods. It was mondo expensive, but cheaper than eating the same thing at a nice restaurant.

We split a Ribeye and a mega pile of snow crab legs. I really wish king crab was more readily available down here.

My wife fixed a perfect Prime rib...
It was in fact a "prime" prime rib.. not a roast of beef.
We have our butcher select for us. Usually twice a year.

In this area of Northern New Jersey we have always had "Beefsteak Dinners". Generally they are fund raisers put on by one organization or another in a rented hall. Long rows of tables are set up with pitchers of beer and sometimes bottles of whiskey. Salted beef tenderloins are grilled and sliced. The pieces are dipped in butter and placed on slices of bread. Waiters continuously bring out trays of meat all night long, as it is an all you can eat affair. The bread is not eaten but stacked up in large piles to show how much you have consumed.

It's heart attack city baby!
