I know the main speaker out is a 4 ohm impedance, but if I have two 8 ohm cabs and connect them to the Speaker out and Ext Speaker output, would I be safe ?

Would the overall output be seeing 8 ohm from the amp ?

Two 8 ohm cabs in parallel would give the proper 4 ohm load which is correct for your amp if un-modified.

I recently acquired a 65' Bassman head. Amazing amp! Running it into a new 2x12 Vintage Bassman cab repro w 2 V30 8 ohm speakers wired in parallel. So like you, I've got the 4 ohm load. Really diggin jumpering the channels together.
